Great menu with some really nice cuts of meat. Fantastic venue and staff. Highly recommended if you're in Banff.

Fantastic experience all around. The food was amazing! The staff were great. Shawna was our server and she was fantastic as were all of the staff. We were really impressed with everyone’s knowledge of all of the ingredients. We had never been here before and everything was explained to us from the time of seating to the time the food arrived. I didn’t catch everyone’s names, but the woman running the food was really great in explaining everything as she set it down also. We don’t treat ourselves to a meal like this often, but I’m so happy we choose the Bison for a special night out.

OMG, that's all I can say, the best rib and thw best burger I have ever had in Canada. Staff are very friendly and professional. Love this place and would love to come back again if I have chance, highly recommended.

Really recommend The Bison. Some fine dining with delicious recipes from the sea and from the land. I order the Octopus and their favorite Bison Ribs. Great place for small groups and a romantic dinner.

I picture the head chef with a 4' long beard, leathered skin, and a wheat sprout in his mouth. There may also be a stack of letters from Ted Kaczynski in his isolated mountain shack because this man knows the local food sources. I started with elk tartare, and moved on to the Bison short rib paired with a fine local pilsner. The tartare had an excellent mix of capers in a sea of buttermilk with rye crisps that melted in your mouth - a veritable food-gasm. The Bison short-rib fell off the bone and the mix of potato and sunchoke was a perfect compliment. If the German army were seizing Banff, I'd hole up here until I was dead or they ran out of food. If you're in Banff, and don't eat here, the best you can say is you've halfway experienced the locale.
