It is a dining experience. A novelty meal that I'd only do once. Food was good. Although limited options. The options are unique and tasty. But they are not something that'd make me want to come back for. I'd say it's a good option as first date for a new couple over 30 that are both employed and have some sort of degree.

There’s always something new and wonderful to try from the kitchen or bar. Adventurous food and drink that emphasizes flavor. I love the way the waitstaff takes care of each table, “coursing” your choices so your meal makes sense even if you just blindly pointed to a half dozen menu items that looked interesting. Every restaurant should be like Republic.

This was an exceptional dining experience. The food was fresh and perfectly prepared. The potato fritters were to die for. Everything was delicious. My favorite part was how knowledgeable the staff was. With each dish that was brought to the table, the server explained everything that went into. Exquisite presentation and a delightful atmosphere.

So disappointed. I have been looking forward to this place for a year. Atmosphere and drinks were great. Miserable waitress- rushed, dismissive. As soon as it was clear we didn't want the Chefs menu she was done with us. I'm a very adventurous eater- Salmon great, scallops very good, the lamb was awful. Carrots were good, duck egg interesting. Asparagus was bland, Ploughmans platter had some great options but four pieces toast for a table of 6- really it's a$25 app- with far more meat and cheese and no bread to put it on. She wouldn't know how much the lamb sucked or that I would have loved another cocktail cuz she never checked on us. I'd go back for drinks as the bartenders are great, but I don't need another meal there. I'm sad I wanted to love it.

Got the Sausage Sammy. The flavor was not super bold, and I was disappointed. Honestly, I've had better sausage sandwiches from the Jimmy Dean....you know, from the frozen food section in the grocery store. I also split the confetti roll with friends. It could have been named better. It was dark brown and hard on the outside, not ooey and gooey like you expect from a cinnamon roll. I heard the food at this place is so great, and I just did not agree. So I left disappointed. The atmosphere is open and spacious though, and our waiter was super friendly.
