Wow, the Devils eggs are a great starter! Perfectly proportioned bacon and caviar make this appetizer phenomenal. We (a party of two) were seated immediately during lunch hour on a Sunday. I had the burger, ordered medium, and it was amazing. Great flavor and precisely cooked to medium. The tater tots were a great addition. Not your traditional tots, they had a unique flavor. Very cozy atmosphere, it struck me as a great place to have a meal and a drink before hitting the town on a date. I will definitely return for the chicken sandwich! It looked awesome!

I had heard really good things about Carson's kitchen so I was excited when I got the chance to eat there last night. There was only a short wait 15 to 20 minutes. We were able to get seats at the bar why we waited. The menu is small but Mighty. All of the selections were very unique. The tragedy green beans, chicken skins, Wicked shrimp, and the bacon Jam. Each of them were incredible in their own ways and had very unique flavors. I actually highly recommend all four of these menu items. They were also good. I wish I could have ordered more. After letting down all sit for a while, I did order dessert. The bread pudding was absolutely amazing. I was also able to try a bite of the brownie with brown butter bacon ice cream which was also incredible. Bottom line is I highly recommend this place. If you were in downtown Las Vegas you need to come eat here.

Had an amazing evening here. Food was great as usual, but the service was exceptional. Roman, our waiter, was kind and attentive. The whole staff was also friendly and accommodating. This last piece was especially important since our reservation at another restaurant was cancelled, which made us very late to Carson. Will definitely come back soon!

I've been to this restaurant many times and they never disappoint. During this visit, I brought a friend from out of town and she enjoyed it as well. Our server was excellent. He knew the menu inside and out and made recommendations. We sat at counter and talked with the sous chef (I think). We watched him make the Devils Eggs and the Beet Salad. We ended up ordering both. I will definitely be back!

Food was great. We had four platters and they were all delicious. Service was great too. Waters were always filled up, server kept checking up on us. Also the roof top patio is great for date night
