ChoLon is one of those places where you wish 6 stars was possible in a review. Everything is great. Order a bunch of small plates and share with your friends and family. The tea selection is also top notch. Make sure you try the soup dumplings and be prepared to order a second round! The service is also exceptional.

Whoa. Eating at this place felt like being in that show, Chef's Table. The service was superb and the serving style very unique. We had originally planned to come here for happy hour but ended up reserving a table (only to find out that happy hour is only served at the bar), we decided to stay at the table and we're not disappointed. The meals are made to share and we were full from three. We tried the soup dumplings, the pork belly sandwiches (amazing!) and the scallops. The soup dumplings are something you just have to try, it's a wonderful presentation all the way through, with an explosion of flavor in your mouth. The pork belly sandwiches, omg there are no words. The scallops were slightly disappointing for me after the first two dishes, because my expectations were so high, but I think the black ink sauce took away from the scallops. It's a unique flavor and may fit you but it wasn't for me. I still enjoyed it though! The scallops in themselves we very well prepared. Overall 15/10, definitely recommend.

WOW! This place has an amazing sampling menu with generous portion sizes given their prices. This allows the customer to have a tapas like experience, which is my jam. The pork belly buns melted in my mouth, the brussel sprouts with ground pork had just the perfect amount of kick and the calamari was crispy and crunchy bursting with flavor. And the zen master is one of the best tasting cocktails I've ever had. I can't wait to go back and try more!!

I would expect nothing less from a chef who is experienced in both European and Asian cuisines and studied under Jean-Georges. The result of Lon's journey to Denver is a predominantly Asian inspired menu with hints of European flair. The french onion soup dumplings are my favorite, but if I had to chose something that wasn't an appetizer it would be the wagyu chow fun. The beef is always tender and the noodles flavorful. My dinner option would be the stir-fried Malaysian noodles, but you can't go wrong with anything ChoLon creates.

We've seen this place on 5280's best places to eat for years, and yet haven't been before now because in my head I couldn't imagine Asian fusion to be exceptional. I was wrong. It was creative and flavorful, almost to a fault (all of the dishes we had had "loud", complex flavor... They don't seem to do "subtle note of..."). The attentive and friendly service matched the food.
