I have been eating at Cafe Rio since there was only one location in St. George, UT. The food used to be fantastic and I could eat there every week. They slowly grew into a small chain and were then bought by a restaurant company and the food went down hill. The lines are always long and the cleanliness is suspect because they have so many people rotating through and no enough employees out in the eating area. I stopped eating at 'rios' because the food wreaked havoc with my digestive system. After a year long hiatus, I thought I would give them a try again as my family wanted to go there. Once again It was the same result. Maybe I will try again in two years.

The new layout looks great. But it is dirty. So dirty. Food dropped all over the prep area is not getting cleaned up and is mixing in with the other food. The guy in front of me complained that his guacamole tasted weird, and it looked gross, and they said it was because they made it with unripe avacados. They need to clean up and get back to how they used to be. Because their food used to be amazing.

I'm not a fan of the new ownership. The food is still good, but the serving sizes are smaller and the service is pretty bad. The employees always seem angry, like they just got yelled at or something. That being said, the green sauce is incredible, and so is the sweet pork. Put ranch... on everything.

Good food. However, may I suggest something that would make me love it there? If I get a salad with No tortilla, No beans, No rice, why can't I get a tiny bit more meat? When I ask, I get a response from workers like I've asked if I can have the meal for free. I'm not asking for double meat. I understand meat costs more than rice and beans. However, if I'm holding on tortilla, beans and rice, it seems a little bit more meat is a reasonable request.
